By training your staff to be attentive to your customers you can easily increase the average customer spend. Here are just a couple of easy ways that it can be done.

When your waiting staff clear a table or take food to the table get them to look at the customers drinks glasses, are they empty or nearly empty? If they are, then train your staff to ask if the customer would like them to get more drinks. Remember, not every customer will make the effort to go to the bar to order another drink, especially if food has just been brought to the table.

How much extra revenue could you see on every service with this simple tip?

If a customer is ordering their dessert, train you staff to also ask if the customer would also like a coffee or teas with it. You could even take it a step further and get them to ask if they would also like a liqueur with their coffee.
