The increased heat of the burners mean cooking fats are turned to dust, this means that there is no build up of fat on the grill and in the ventilation systems which is a major cause of fires.
The Synergy SG900 has been on trial with a major flame grill restaurant serving over 4k covers a week. They have carried out a test using a gas meter, using their existing grill for six weeks then changing it for two SG900 grills. So far the gas savings are 40% over their existing make. Because the fat is atomised, they also estimate that each of their restaurants could save another £4k per year in cleaning costs.
